Maple Parfait
 

Ingredients (8 servings)

  • 8 egg yolks
  • 125 ml (1 / 2 cup) maple syrup
  • 360 ml (1 / 2 cup) cream 35%
  • 20ml (4 tablespoons) unsalted butter
  • 60 ml (1 / 4 cup) grated maple sugar


Method

  1. Whisk egg yolks until mixture obention white and fluffy.
  2. Heat the maple syrup 2 minutes.
  3. Gradually add the hot syrup to egg yolks while continuing to whip.
  4. Whisk preparing another 10 minutes until thickened.
  5. Whip the cream and place it gently into the mixture.
  6. Smear butter small molds presentation and sprinkle with maple sugar.
  7. Garnish at three quarters and freeze for 3 to 4 hr.
