Maple Parfait |

Ingredients (8 servings)
- 8 egg yolks
- 125 ml (1 / 2 cup) maple syrup
- 360 ml (1 / 2 cup) cream 35%
- 20ml (4 tablespoons) unsalted butter
- 60 ml (1 / 4 cup) grated maple sugar
Method
- Whisk egg yolks until mixture obention white and fluffy.
- Heat the maple syrup 2 minutes.
- Gradually add the hot syrup to egg yolks while continuing to whip.
- Whisk preparing another 10 minutes until thickened.
- Whip the cream and place it gently into the mixture.
- Smear butter small molds presentation and sprinkle with maple sugar.
- Garnish at three quarters and freeze for 3 to 4 hr.
